Fire-roasted tomatillo salsa
This quick and easy, fresh salsa is a great addition to spice up any Mexican dish!
INGREDIENTS:
4 tomatillos
1 yellow onion, quartered
2-4 garlic cloves
1 serrano peppers
2 banana peppers
2 tablespoons fresh cilantro or parsley
1 tablespoon fresh oregano,
1 teaspoon cumin
salt and pepper, to taste
water, as needed
DIRECTIONS:
- Keep the tomatillos and peppers whole and quarter the onion. Roast over a flame on a gas stove or grill. Flip the vegetables periodically once they start to blacken until all sides are roasted.
Pro tip: If you want your salsa spicy, keep the seeds in the peppers. If you want it mild, remove as many of the seeds as you want.
- Let the vegetables cool to room temperature and add the vegetables, garlic, herbs, cumin and salt, and pepper to a blender or food processor. Blend until your desired consistency. Pulse a few times for chunky salsa or more for smooth salsa. Add water if needed to thin out the salsa.
- Serve immediately or chilled with tortillas chips, on top of tacos, enchiladas, or even breakfast over eggs!
