Strawberry mint mojito
Refreshing, delicious and a fantastic way to use strawberries! And just as delicious if made to be non-alcoholic.
INGREDIENTS:
- ¾ cup water
- ½ cup sugar
- 6 strawberries, muddled
- 6-8 mint leaves
- 2 lime, juiced
- ½ tablespoon lime zest
- 4 ounces light rum
- Club soda, to taste
- Ice
DIRECTIONS:
- In a small pot, combine water and sugar. Bring to simmer until sugar is dissolved completely. Turn off the heat and add several mint leaves to steep. Let cool completely.
- Divide the strawberries between two tall drinking glasses then muddle the strawberries with a fork and spoon (a muddler works best if you have one!)
Pro tip: Muddle the strawberries in a large bowl with a potato masher then divide between the drinking glasses. - Zest the limes then juice and combine. Divide the lime juice, simple syrup, and rum equally between both glasses.
- Add ice then top off with club soda to taste. Garnish with a sprig of mint and a strawberry on the rim of the glass. Serve and enjoy!
