Strawberry LEMON BLONDIES

Use those freshly picked strawberries with this perfect summer dessert!

INGREDIENTS:

For the blondies: 

  • 2 sticks of butter, at room temperature 
  • 1 cup fresh strawberries, sliced 
  • 1 large egg 
  • ¾ cup of granulated sugar 
  • ¼ cup lemon juice, fresh squeezed 
  • 2 ¼ cup all-purpose flour 
  • ½ teaspoon baking powder 
  • ½ salt 

For the glaze: 

  • 1 cup powdered sugar, sifted 
  • 1 tablespoon strawberry puree (2 large strawberries) 
  • 1 tablespoon lemon juice 
  • ½ tablespoon lemon zest 

DIRECTIONS:

  1. Preheat your oven to 350° 
  2. Line a 9-inch square baking pan with parchment paper, making sure to exceed the edges. This will allow for easier removal and cleanup! 
  3. Cream the butter and sugar together until fluffy then beat in the egg until fully incorporated. Then whisk in the lemon juice. 
  4. Whisk together the flour, baking powder and salt (dry ingredients) then add to butter, sugar, egg, and lemon juice mixture (wet ingredients) until fully incorporated leaving no more dry flour in the mixture. 
  5. Fold in the sliced strawberries then spread the mixture as evenly as possible into your lined baking pan. Bake for 30-35 minutes until the edges are golden.

    Pro tip: You can check to see if the blondies are done by sliding a toothpick in the center, if it comes out clean, it is done cooking. If it comes out wet, it needs more time in the oven. 

  6. Remove the blondies from the baking pan with the parchment paper and place them onto a cooling rack to cool completely.  
  7. While the blondies are cooling, make your glaze by pureeing the strawberries. Strain the puree for a smooth consistency. Whisk in sugar, lemon juice, and lemon zest until smooth. Spread the glaze over the cooled blondies. Let the glaze set before slicing. Serve and enjoy!
